Octopus in tomato sauce

Hello everyone, today is an ideal day to share a good recipe!

Seafood is one of my favorite foods. Every time I have the opportunity to taste these foods, I feel a great pleasure. That's why today I want to share a very easy recipe to prepare with octopus.

Octopus is a food that you have to know how to cook to make it soft. It is a food that has elastic fibers that, if not cooked properly, remain with a chewy and unpleasant texture because you have to chew it many times and in the end swallow the whole piece because there is no way for the teeth to crush a chewy octopus. In this recipe, I will tell you a little secret to make the octopus soft and pleasant to the palate.

Ingredients

2 pounds of fresh octopus
2 medium onions
1 medium bell pepper
5 medium tomatoes
3 cloves of garlic
1 sprig parsley
1/4 cup green olives
1/4 cup olive oil
Salt and pepper to taste

Yields 4 servings

Step 1

Wash and chop the vegetables (onion, bell pepper, tomatoes).

Step 2

Bring water to a boil with a bay leaf and a teaspoon of salt. When the water is boiled, add the octopus and cook over a medium heat for only 3 minutes. This will soften the elastic fibers of the octopus.

Step 3

After 3 minutes, remove the octopus from the water and let it cool.

Step 4

Cut the octopus into small cubes.

Step 5

Heat the oil in a frying pan. Add the garlic, onion, bell pepper and sauté.
Add the tomato and olives. Cook for 5 minutes until the tomato releases its juices.

Step 6

Add the octopus and season with salt and pepper. Cook on a low heat for 40 minutes. If cooked less, the octopus will be tough. Add the chopped parsley before switching off.

This recipe is delicious. You can serve the octopus with pasta, rice or boiled potatoes as in the pic.
